I have nothing against lettuce. Lettuce is great! But come summertime, when there’s such an abundance of produce, I find myself steering away from my usual green bowl. I want something a bit more colorful and it’s hard not to fill salads with tomatoes, eggplant, corn, zucchini, and more when they are at their freshest.
