It’s back-to-school time, and that means making sure you have plenty of after-school snack ideas ready for hungry kiddos. Frozen chicken nuggets were a staple of my childhood, but these baked popcorn chicken bites — breaded in crushed potato chips! — would’ve made 8-year-old me much happier.
